Lasagna, Anyone? Three Great Low Carb Recipes

Low carb and keto diets have become increasingly popular in recent years as people seek to improve their health and achieve their weight loss goals. I. Zucchini Lasagna

Zucchini is a great low carb substitute for traditional lasagna noodles. This recipe is easy to make and tastes just as delicious as the real thing!

Ingredients:

  • 3 medium zucchinis, sliced lengthwise
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup low carb tomato sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. Brown ground beef in a large skillet over medium heat.
  3. Add onion and garlic and cook until onion is soft.
  4. Add tomato sauce and simmer for 5-10 minutes.
  5. In a separate bowl, mix together ricotta cheese, salt, and pepper.
  6. In a 9×13 inch baking dish, layer zucchini slices, meat sauce, ricotta mixture, and shredded mozzarella cheese.
  7. Repeat layers until all ingredients are used, ending with a layer of shredded mozzarella cheese.
  8. Top with grated parmesan cheese.
  9. Bake for 30-35 minutes, or until cheese is melted and bubbly.

II. Cauliflower Lasagna

Cauliflower is another great low carb substitute for traditional lasagna noodles. This recipe uses cauliflower florets to create a hearty and delicious lasagna.

Ingredients:

  • 1 large head cauliflower, cut into small florets
  • 1 lb. ground turkey
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup low carb tomato sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

  • 1/2 cup chopped onion

  • 1 cup ricotta cheese
